Cook moong lentils in plenty of water.

Add cumin to ghee in a skillet on medium heat.  Fry till cumin seeds are brown.

Add chopped onion, ginger and chili. Add turmeric. Fry till onions turn pinkish.

Add tomatoes and salt. Cook till tomatoes become mushy. The salt will help cook the tomatoes quicker.

Add the spinach leaves, let them shrink for a couple of minutes and then mix well. Cook for 4-5 minutes.

Add the cooked yellow lentils and the water that they have cooked in. Mix. Cook for 4-5 minutes.

Serve warm with either rice or bread of your choice.
