Dairy-free and wonderfully light, this is one of the easiest breakfasts you’ll ever make! Dress it up with your favorite toppings to go sweet or savory — it’s that versatile. It’s one of my personal favorites, and I have a feeling it might become yours too!

Corn and Peas Salad
Before you say, “A salad for breakfast? Really?”, hear me out! This one’s fresh, colorful, and comes together in just 5 minutes if you have frozen corn and peas on hand. Pair it with a slice of toast, and you’ve got yourself a quick, wholesome start to the day.

When pumpkin season rolls around, I can’t wait to get into the kitchen and bake this seasonal favorite. The warm aroma of banana and spices filling the air is pure comfort! I love enjoying a slice of this bread with a cup of coffee. And the best part? You can make it any time of year by swapping the pumpkin for butternut squash.

Adai
You’ll fall in love with these savory lentil crepes, known as adai (uh-da-ee), where I come from. They do take a little prep time, but it’s totally worth it. Make a big batch of the batter ahead, and you’ll have breakfast ready in minutes! Pair them with your favorite dip or vegetable side; my personal favorite is my homemade tamarind sauce.

You might think this one belongs on the dessert menu, but trust me, it makes an incredible breakfast too! A generous spread of butter and a cup of good coffee (or hot chocolate) will set you up for the day like nothing else. It’s one of my favorite “grab-and-go” breakfasts!
